Quality is never up for negotiation. Wherever possible, we use UK-sourced ingredients, supporting local suppliers while keeping our beers rooted close to home.
But when a beer calls for something further afield, we go and find it. From Europe to the USA, New Zealand and beyond, we select the best ingredients for the job, building flavour, aroma and character without compromise.
Refining a beer takes patience, precision and a fair bit of trial and error. Every brew is sampled, measured and monitored throughout the process to make sure the balance, flavour and maturity are precisely where they need to be.
Once we’ve perfected a recipe, it stays in the trusted hands of our brewers. With guidance, every batch is brewed with consistency in mind, so your favourite pint tastes just as it should, every time.
We’ve always been mindful of our environmental impact, and we’re constantly refining the way we recycle, reuse and reduce waste throughout the brewing process.
One tradition we’re especially proud of is giving our spent grain a second life. Once it has done its job in the mash, it goes on to feed farm animals in the local community, turning a brewing by-product into something genuinely useful.
Everything begins with the search for quality ingredients. Over the years, that journey has taken us across the UK and overseas, seeking out the best malt, hops and yeast for every brew.
Once the ingredients are ready, we treat the water to suit the beer style we’re making. Then the mash begins, carefully mixing malt and water to give the natural enzymes time to convert starches into fermentable sugars.
After mashing, the wort is rinsed, collected and brought to the boil. This is where the hops come in, added at different stages to build bitterness, flavour and aroma before the brew is transferred to the fermentation vessels.
Then it’s over to the yeast. This is where the real magic happens, as the sugars are transformed into alcohol and the beer begins to take shape.
When the balance is just right, the beer is left to condition for seven days, allowing the flavours to settle, soften and come together.
Then it’s ready.
Off to the pub, onto the bar, cask tapped, pint poured, perfectly chilled and best enjoyed with friends and family.
Someone once said that ‘variety is the spice of life’, we’ve no clue who it was but they were right! And we fully endorse the concept. What is life without diversity, uniqueness, eclectic choice? For us, creating variety is one of the most exciting parts of our job and we’ve had some fun!
